Sell What You Like


Many waiters make the mistake of telling the guest that everything is good when the guest asks for a recommendation. It is better to be more specific and give them your opinion on one or two items and how you like them prepared.

The guest is giving you permission to sell them! So take the opportunity to offer them the wine, beer or cocktail that you think pairs best with the dish you are selling them.

This increases your tip especially if you have the item prepared different than how it is described on the menu. For example if you offer deep fried catfish on the menu, suggest that the guest tries it blackened, grilled or baked.

Come up with some variations based upon you menu but be sure they are variations that your cooks can handle without creating a backlog of orders.
