“Would you like fries with that?”
This is the billion dollar question. Did you find it
offensive? Probably not, most of the time you most likely responded with a
resounding yes! So why should we not help our guests indulge themselves.
Suggest appetizers, buying a bottle of wine instead of just
two glasses. Recommend desserts and let them know that they may share. If they
ask for recommendations, give them and don’t assume you know the budget they
are working with. Give them choices and make them all sound outstanding.
Don’t forget the up sells that can make the meal even
better. These can be as simple as adding bacon, cheese, mushrooms or avocado to
a burger. Why not suggest adding sautéed mushrooms to a steak or asking if they
would like crab legs or a lobster along with it.
Never be afraid to ask for the order or to make suggestions.
The majority of your tips you make at the end of your shift depend on your
total sales. Increase your sales = increase your income!
A professional server understands that they are not just
servers and order takers, but they are also sales people and commissioned sales
people at that. You have to be more than just an order taker to make the big
money as a server, you also have to sell.
In our business it is not hard core used car salesman
selling but soft suggestive selling, guiding the guest to a memorable
experience. Suggesting items that will
enhance the meal is easy once you start to practice and once you know the menu
inside and out.
We are in the hospitality industry and as such we should be
hospitable and help ensure the guests has a pleasurable experience. The guest
after all is here to enjoy themselves.
No one can say yes if they are not asked the question!
Optimize your time by anticipating the needs of your guests,
have refills ready for them, bring them more bread, condiments etc. before they
have to ask for them.
Keep in mind the old full hand in and full hands out rule.
